Meals from Kenya: African Cultural Cooking Project

The deliciousness continues! Our ambitious Kenyan chef gets yeast-y :). Here are this weeks' shopping lists:


December 3rd

Mandazi:

  • 4 Cups All purpose white flour / 566 gms

  • 4 tspn dry yeast

  • ½ teaspoon ground cardamom

  • 1 cup sugar /200gms

  • 1 1/4 to 1 1/2 coconut milk (can be substituted with warm milk)

  • 1 tbl canola/veg oil (optional)

Pilau:

For the broth:

  • 2 pounds beef/lamb or mutton

  • 1 tbsp. Cumin seeds 2 Cinnamon stick 3 cloves

  • 1 tsp whole cardamoms

  • 1/2 tsp peppercorns

  • Garlic and ginger

For the rice:

  • 3 Tbls vegetable oil

  • 2/3 large potatoes (optional)

  • 1/2 onion diced

  • 1 tbsp cumin seeds

  • 1 tbsp pilau seasoning (Masala)

  • 1 tbsp fresh ginger/garlic paste.

  • 2 cups long grain

  • 3 cups broth Cooked meat

  • Salt to taste

Salad:

  • 1 lettuce

  • 1 carrot

  • ½ onion

  • Lime as needed

  • Salt to taste

Tomato Sauce:

  • Tomato

  • Tamarind

  • Dates (ketchup or sugar as substitute)

  • Onion

  • Garlic

  • Cilantro

December 10th

Maharage:

  • 500 g kidney beans rinsed and drained canned beans

  • 5 tbsp. vegetable oil

  • 2 onions

  • 2 tomatoes

  • 250 ml coconut milk

  • Salt

  • Thai green chili

Spinach:

  • 2 lbs spinach or amaranth greens

  • 2 medium tomatoes

  • 1 medium onions

  • 2-3 tsp curry powder

  • 1 medium potato

  • 1 tsp salt

  • Ground black pepper

  • Cilantro

Bread buns:

  • 500gm/4 cups all purpose flour

  • 6 Tbl/75 gm sugar

  • 1 1/2 cups / 350ml milk or water

  • 2 1/4 tsp / 7gm yeast

  • 1 1/4 tsp 8gm salt

  • 6 Tbl vegetable oil

Kaimati:

  • 1 cup plain flour

  • 3/4 water 🔷

  • 2 tbsp plain yoghurt

  • 1 tsp sugar

  • a pinch of salt

  • 1 tbsp dried yeast

  • oil for deep frying

Syrup:

  • 1 cup sugar

  • 1 cup water

  • cardamom
